Kate's bread

BANANA ZUCCHINI BREAD
Ingredients
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 1 cup mashed ripe banana (about 2 medium sized bananas)
  • 1 egg
  • 2 tsp vanilla extract
  • 1 1/2 cup all-purpose flour
  • 1 tsp cinnamon
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 1 cup zucchini, shredded
  • 1/2 cp chocolate chips
Instructions
  1. preheat oven to 350 degrees F
  2. beat together the oil and sugar in a stand mixer
  3. add in the mashed banana, egg, and vanilla
  4. in a medium bowl whisk together the flour, cinnamon, baking powder, baking soda and salt
  5. add the dry ingredients into the wet and stir on low until just combined
  6. using a spoon fold in the zucchini and chocolate chips
  7. spray a loaf pan with cooking spay and pour in batter
  8. bake for 40-50 minutes or until a toothpick inserted into the center comes out clean

Just made this recipe.  It is phenomenal.  The chocolate chips made it even better.  Highly recommend this recipe
